Chef Clayton

Whenever i say, Clay what do you want to eat for breakfast it's always "oatmeal!"  and when i asked the other day what kind of cookies should we make... "oatmeal".  sounds good.  Clay takes baking very seriously, he has to "do it myself".  He climbs all over the place to get everything we need.  Too bad he has no idea what we need. 
Breaking the eggs, "by myself" i'm pretty sure i didn't let the others do this till they were 5, but then again they didn't kick and scream over the matter either.  Check out the tongue.  That helps him.

Clay's Oatmeal Raisin Cookies:
3/4 cup butter, softened
1/2 cup sugar
3/4 cup brown sugar
2 eggs
1 tsp vanilla extract
1 1/4 cups flour
1 tsp baking soda
3/4 tsp cinnamon
1/2 tsp salt
2 3/4 cups rolled oats
1 cup raisins
 
Preheat oven to 375 degrees.
 
in a large bowl, cream together butter and sugars until smooth.  Beat in the eggs and vanilla until fluffy.  Stir together flour, baking soda, cinnamon, and salt.  Gradually beat into butter mixture.  Stir in oats and raisins.  Drop by teaspoonfuls onto ungreased cookie sheets. 
 
Bake 8 - 10 minutes or until golden brown.  Cool slightly, remove from sheet to wire rack.  enjoy.
